Natto rice bowl

Stir before you add the soy sauce. And let the rice cool for a minute first — nattokinase is heat-sensitive.

Method

  1. Take the natto out of the fridge and leave it 5–10 minutes. Cold natto does not string.

  2. Stir 20–30 times with no soy sauce added. It turns white and foamy and the threads lengthen.

  3. Then add the soy sauce and mustard and stir about ten times more. Seasoning first gives you fewer threads.

  4. Put the rice in a bowl and let it cool 1–2 minutes — until it stops steaming hard.

  5. Cut the gim into strips with scissors and slice the spring onion thin.

  6. Spoon the natto over the rice, make a hollow in the middle and drop in the egg yolk.

  7. Scatter the gim and spring onion, add a few drops of sesame oil, and mix before eating.

Cooking note

The order of stirring changes the result. Adding soy sauce first lets the salt and water interfere with poly-gamma-glutamic acid — the sticky threads. Stir 20–30 times unseasoned to develop them, then season. When the foam turns white, it is ready.

The rice is cooled because of nattokinase. The enzyme is heat-sensitive, and dropping natto onto rice straight from the cooker (above 90°C) inactivates a good share of it. One or two minutes makes a real difference. That said, this site does not claim that eating nattokinase lowers your blood pressure — the trial used a 2,000 FU capsule. Cooling the rice costs nothing, so it is worth doing.

Count the sodium. Natto itself holds almost none: 7 mg per 100 g. The sachet of sauce that comes with it is usually 300–400 mg. Use half of it, or swap in a teaspoon of soy sauce (about 300 mg) to control it. The gim carries salt too.

Only the yolk goes in for texture; the white makes it watery. If raw egg worries you, soft-boil it instead.

Brown rice is here for the fibre — 2.4 g in 45 g of natto, plus 2–3 g in a bowl of brown rice.

Do not eat this dish if you take warfarin. Unlike other vitamin K foods, natto's bacteria keep producing vitamin K in the gut, so the effect lasts for days.

Early research

Natto

Three years of MK-7 in 244 women slowed bone loss at the lumbar spine and femoral neck — but not at the total hip. One year of natto capsules in 334 women changed nothing anywhere.

Moderate evidence

Brown rice

People who eat more whole grains consistently show less type 2 diabetes. In randomised trials, though, the glycaemic markers barely moved.

Egg

The advice to limit yolks because of their cholesterol has been overturned. What remains is choline, a nutrient far fewer people talk about.

Early research

Gim (laver)

Seaweed's vitamin B12 was long dismissed as an unusable analogue. A 2024 randomised trial found otherwise.
