The point of this recipe is not an ingredient. It is a position.
Look at the 2021 trial in the Journal of Nutrition. Adults at cardiovascular risk were split three ways for eight weeks.
- ADD arm (16) — 68 g of pecans added to the usual diet
- SUB arm (18) — 68 g of pecans replacing foods containing saturated fat
- Control (18) — no pecans
Both pecan arms lowered total cholesterol, LDL, triglycerides, non-HDL and apoB. The control did not move.
But this site holds the opposite result under macadamia. The trial that only added macadamias failed to move lipids; they moved only when saturated fat was displaced.
So this recipe is designed the safe way. Where butter or marshmallow used to sit on a roasted sweet potato, the pecans go instead. A swap, not an addition.
Per serving:
| Per serving |
|---|
| Sweet potato 200 g | 172 kcal, fibre 6.0 g, beta-carotene 17,000 µg |
| Pecans 30 g | 207 kcal, fat 21.6 g, fibre 2.9 g, manganese 1.35 mg |
| Oil and salt | about 22 kcal |
| Total | about 400 kcal, fibre 9 g |
Read the energy honestly. Thirty grams of pecans is 207 kcal. At 400 kcal a plate this is a meal, not a side.
And the trial's 68 g is 470 kcal. Simply piling that on top raises the day's total. The number is exactly why the trial needed a substitution arm.
What to displace. Specifically:
| Instead of | Put |
|---|
| 15 g butter (108 kcal, 7 g saturated fat) | 15 g pecans |
| Cream or whipped topping | Pecans |
| Marshmallow or sugar syrup | Cinnamon |
What the cinnamon does. It gives an impression of sweetness without sugar. Sweet potato carries 4.2 g of sugar per 100 g and roasting concentrates it, so there is no reason to add more.
Why the pecans go in for the last ten minutes. Pecans are 72% fat, and high-fat nuts burn fast. They will not survive 35 minutes at 200°C. Eight to ten minutes is enough for the oil to come up and the aroma with it.
Why break them roughly. Here the pecans carry both the fat and the texture. Ground fine, nothing is left in the mouth and the sense of replacing butter goes with it.
Why 2 cm rounds. Thinner and they dry out in 25 minutes; thicker and the centres stay raw. Two centimetres is where the outside caramelises while the inside goes fluffy.
Why one layer. Overlapping traps the moisture, so you are steaming, not roasting. No browning means less sweetness too.
Why rest five minutes. Very hot food reads less sweet. Five minutes lets the starch settle and the sweetness come forward.
Keep leftover pecans in the freezer. At 72% fat they go rancid quickly. If pecans left in a cupboard smell like paint, throw them out.
Do not give them to a dog. As with nuts generally, mouldy pecans can cause neurological signs in dogs.
